Dinner for the Week

Here is my grocery haul from shopping yesterday. Followed by some ideas for dinner this week.

1 Kilo     Lentils for                          $2
.25 kilo   Oatmeal for                       $.50
3            Green & red bell peppers   $1.20 (.40 cents each)
1 Kilo     Roma tomatoes                 $.80
1 Kilo     Carrots                             $.50
1 bunch   Spinach                            $.50
1 Kilo     Brocolli                             $1

1 Kilo    Banana                               $1
2 Kilo    Watermelon                        $1.20
.5 Kilo    Plantain                              $.50
1 Kilo    Strawberries                       $1
1 med    Cantalope                           $1.50
                                                        total: $11.70*
                                                         plus $10 for meat & cheese

For dinner this week:
Lentil Soup with sweet plantains, bell pepper & spinach
Tortas de Brocolli (croquettes of brocolli with panela cheese in the middle)
Meatballs with zucchini hidden inside
Alhambre de pollo (pretty close to chicken fajitas for the most part)

*I like to buy the meat & cheese fresh, so I didn't pick up any shopping yesterday but
1 Kilo of ground sirloin beef is $7.
1 Kilo of chicken breast is $4.5
1 Kilo of panela cheese is $7
1 Kilo of eggs is $2 (needed in the croquettes)
I only need a half kilo though to make the meals.

This isn't to say we live on $20 a week for food, though that would be nice. There is still breakfast and lunch: cereal, milk, bread, pasta etc.

    1. Sure! The meatballs are easy... just finely chop the uncooked zucchini as small as you can- or better might be to chunk them, stick them in the blender putting the blender on the lowest speed and then turning it on and off until it is all crushed to bits, but before it becomes a puree. A food processor would be the best for this if you've got one, but it can be done in the blender. Just add the zucchini to the meatball recipe you already have going, and more bread crumbs if the mixture isn't staying together as a ball. or substitute one part meat for one part zucchini. I'll get back to you with the lentil soup recipe- I have it saved in a different place right now.
      I woke up this morning thinking about Shepard's Pie. And realized it's almost March! Though it should be March right now, I feel a little cheated. I'd love for you to share yummy Irish dishes and/or recipes!!! I remember when we had corned beef and cabbage last year, that was AWESOME :D

  3. Thank you! I will add zucchini to my meatballs next time. I have a good sheperd's pie recipe that I will post!

    1. Eli's Sopa de Lentejas
      Cook 3 carrots and 2 cups of lentils with a bay leaf, cumin powder, chicken cube & salt to taste in the amount of water that seems right to you (stewy- less water, soupy-more water). Once cooked through add:
      1 red pepper
      1 plantain*
      .5 small onion
      1 garlic clove
      tomato paste to taste
      chopped spinach (optional, but recommended)
      couple of pinches of cilantro (optional)
      cayanne pepper (optional & to taste)

      Let boil until everything is cooked through. *The blacker the skin on the plantain the sweeter it is. A yellow one might taste okay too- it has a more potatoey and starchy taste to it.

      Don't forget the Shepard's Pie! I am jonesing for it over here!
